BuonVento all year round, even in winter!
While we serve Italian cuisine at our restaurant, BuonVento doesn’t stop when the summer season ends. Winter is the quiet season in Paros, and though the restaurant takes a well-deserved break, we certainly don’t!
That’s when we turn our attention to crafting our beloved Panettone di Paros — a festive tradition made with care, local ingredients, and Italian expertise. Available both on the island and in Athens, our panettone brings a taste of BuonVento to your Christmas celebrations.
Read on to discover how we make it, what makes it special, and how to get your hands on one this holiday season!

The making of Panettone di Paros
Our Panettone is handcrafted by us, as well as the fruits, which are locally sourced and candied by us. This is a true “passion project” for us. The fact of ravishing the palates of our big and small clients during Christmas time is what makes our heart jollier.

A dream come true: every single year
Chef Massimiliano Ruocco crafts each panettone using natural sourdough, candied fruit from our garden, fresh eggs, Naxos butter, and Madagascar vanilla — all brought together through a slow, two-day leavening process.
20 Days of Around-the-Clock Production
Just like with our mozzarella, we set out with a clear idea: to take the incredible ingredients of Paros and transform them through the lens of Italian culinary tradition and craftsmanship.

Fresh Paros Fruit, Candied by Us
What makes our Panettone di Paros so special? It’s the love and care behind every ingredient. We make everything ourselves — no industrial shortcuts.
We personally pick the oranges, mandarins, and lemons from Paros, then candy them by hand, following traditional methods.
